Mini Banana Oat Bran Muffins

For those of you with young kids these are a great snack or a great breakfast to go!

You can make these at the beginning of the week and freeze them, and as you want just take them out, pop them in the toaster oven or microwave and enjoy!

Ingredients:

1 cup whole wheat flour

½ cup oats, blended to make crumbles

Pinch of salt

½ tsp baking soda

¼ tsp baking powder

1 ½ tsp cinnamon

½ cup sugar

1 tsp vanilla

½ cup greek yogurt

½ cup milk of choice

2 eggs

2 ripe bananas, mashed

Directions:

  1. Preheat oven to 350 degrees. In a bowl mix all of the dry ingredients together.

  2. In a mixer add in sugar, vanilla eggs, yogurt/milk and banana, and mix until combined.

  3. Slowly add in the dry ingredients and mix until well combine. (if its super think you can add a tbsp of water at a time to thin out batter).

  4. Pour into mini muffin pans with paper liners and then add a couple dark chocolate chips to the top.

  5. Bake at 350 for about 15 minutes or until muffins are golden brown and spring when touched. Let cool, and enjoy!!
