Lentil Soup
Taking on the NEW YEAR with lentil soup. Italians ate lentils on the new years for wealth and prosperity because they were believed to resemble Roman coins! So eat all the lentil soup this week!!
Ingredients:
smoked pork neck or ham bones (or none if you’re vegetarian)
1 lb lentils (check for stones)
2 stalks of celery
1 onion, diced
3 large carrots, chopped
1 small ripe tomato, diced
handful fresh parsley, chopped
2 cloves fresh garlic, chopped
¼ tsp oregano
salt & pepper to taste
Directions:
Soak lentils in cold water for 30 minutes. Rinse and strain.
Place lentils and bones in 2 quarts of water and let cool for 30 minutes (scoop off any fat on top)
Add vegetables, parsley, garlic, oregano, pepper, and salt. Let cook for another 2 hours until soft and thick,
Top with parmesan cheese and/or red wine vinegar.
