Whole Wheat Zucchini Bread

If there’s anything I love more than banana bread it’s zucchini bread, honestly not sure why, it doesn’t make sense to me either.

BUT if you didn’t know most banana/zucchini breads are jam packed with sugar, and butter. However don’t get me wrong you all know I am the no diet dietitian (eat EVERYTHING but in moderation), however it also does not hurt to make things taste just as good without the added sugar, especially if you eat is several time a day like me. So thats what the recipe is below!

Ingredients:

3 cups whole wheat flour

2 large eggs

½ cup sugar

2 cups grated zucchini, drained

1 tbsp vanilla

½ cup crushed pineapple, drained

2 tsp cinnamon

½ tsp nutmeg

½ tsp salt

2 tsp baking powder

1 tsp baking soda

Directions:

  1. Preheat oven to 350 degrees. Mix eggs, sugar, zucchini, and pineapple in a big bowl until combined. 

  2. Add all the dry ingredients, mixing slowly.You can use mini muffins tins (which are SUPER cute) or you can just put them in loaf pans, making sure to spray them well before. 

  3. Pour mixture into pans and bake at 350 degrees for 20-30 minutes or until a toothpick comes out clean.

    ** you can sprinkle some brown sugar on top before putting them in the oven. It creates a nice caramelization!

    ** add ½ cup chopped walnuts for added protein and crunch!
