Better for you Quiche

This recipe has been in my family for a while and theres a good reason for that, it's delicious!

Ingredients:
1 deep 10″ pie crust (if you're gluten free or prefer no crust then I recommend just spraying a pan with non stick cooking spray)

1/2 cup chopped onions

1/2 cup broccoli, cooked

1/2 cup frozen spinach

3 egg whites

3 eggs

1 10oz pkg mushrooms, sliced

1/3 cup low fat cheddar cheese, shredded

1/3 cup low fat swiss cheese, shredded

1/3 cup cottage cheese

1/2 cup low fat milk

1/2 tsp salt

pinch of cayenne pepper

pinch of black pepper

pinch of paprika 


Directions:

  1. bring oven to 375 degrees. If using pie crust put into pan and pinch edges to platter; if not butter the pie pan.

  2. saute onions, mushrooms, spinach, and broccoli and set aside. 

  3. beat eggs lightly, mix in milk, cottage cheese, shredded cheese and seasoning in one bowl, then combine with vegetables

  4. pour mixture in baking dish

  5. bake for 30 to 35 minutes at 375 degrees until filling is golden and puffy or until knife comes out clean.
